The course has three phases
Orientation: What’s it all about?
We’ll meet and eat as a group on three occasions in various locations around the City of Sydney to give you a taste of FoodLab Sydney and find out what you want to get out of the program so that we can tailor it to meet your needs.
You will also be introduced to food producers, businesses, markets and organisations around the City, as well as to practical tools to assist you to think through the type of food business you might want to develop or work in.
Certificate II Course in Kitchen Operations
Over 10 weeks at TAFE NSW – Ultimo you will earn this formal accreditation. Building on your own knowledge and skills you will get the essentials down pat, including:
- Prepare basic dishes, using hygienic practices
- Manage perishable items
- Clean kitchen premises
- Fundamental cookery skills
- Learn environmentally sustainable work practices
Starting up a successful small food enterprise
Now we are at the pointy end. You will learn how to do business for purpose as well as profit from people who have been there and done that. Or learn the ins and outs of small business to take your career in food to the next level. Mentors will guide you in the following areas:
- Finding the business model that best fits your idea
- Building a brand, including developing and marketing products
- Getting started with licensing and regulation
- Managing finances and business operations
- Becoming a leader and advocate
You will receive coaching, mentoring and the level of support you need in developing and pitching your idea to work in food to audiences including investors, consumers, and fellow entrepreneurs.

Having done the program, you are already part of a community of like-minded entrepreneurs to connect, collaborate, commiserate, and celebrate with.
Staying connected through our Members Discussion Group enables you to communicate regularly by posting questions, receiving advice, and sharing resources, providing you with ongoing support from your peers, project coordinators and mentors.
